Cabernet Sauvignon in Wine Kits

For homebrew quality wine kits, Cabernet Sauvignon grapes give an excellent result well worth ageing to achieve a top quality homemade wine. Combined with oak chips to simulate barrel ageing this grape will produce a very high quality red wine.

When young, the Cabernet Grape has a grassy nose and harsh bite often with purple or violet tones. The mature wine has a deep red colour, sometimes almost brownish. It is mellow with great depth of flavour, complex, and with fruit flavours of blackberry and blackcurrant.

Cabernet Sauvignon is known as a "hard" grape, making wines of classic breed and complexity that often need to bottle-age for at least 5-10 years in order to reach peak flavour condition.

When grown in Italy it is sometimes referred to as the Uva Francese.

Although recorded as present in the Bordeaux region since at least the 17th century, parental provenance has always been unsure.

Recent research, (Meredith and Bowers, "Nature Genetics Journal" 5-97), has unexpectedly discovered that the original parents of this variety were Sauvignon Blanc and Cabernet Franc, an astounding reversal of previous assumptions
